1 beet chopped into small pieces

4-6 stalks of celery (depending on size)

A handful of flat Italian parsley

1 apple

1 cucumber; cut in half and then halved again.

4-6 carrots (Chopped) depending on size.

Juice ingredients in a masticating, cold-press juicer. Stir, pour, and enjoy.

Notes: All ingredients are organic to minimize pesticide and herbicide toxicity. If the cucumber is not organic, please make sure to peel the skin off. You can substitute parsley with another green, although I do not recommend it. If the taste does not suit you, then test out another alternative like kale. If celery’s taste does not suit you then add one or two fewer stalks, but again I do not recommend it. This recipe makes enough for 2-4 people depending on serving size.


Beets are another one of those amazing superfoods that are low in calories (great for the waistline), but very high in nutrition.  Beets are great for those suffering from hypertension as studies have shown that beets contain a high concentration of nitrates that help to lower blood pressure when converted in our body to nitric oxide. In addition, athletes should consider increasing beet consumption as nitrates help boost the efficiency of the mitochondria, which are the powerhouses of our cells. Lastly, nitrates promote dilation of blood vessels, increase blood flow to the brain, and enhance cognitive function. Therefore, drink that beetroot juice!

Beets also contain anti-inflammatory pigments called betalains. If cooked, then you will ingest plenty of dietary fiber that is excellent for digestion. Betalain pigments can also reduce the growth of cancer cells in vitro.

Celery contains at least 15 antioxidants in a single stalk, including vitamin C, beta carotene, and flavonoids. Its phytonutrients have been shown to reduce inflammation and help with arthritis and osteoporosis. Both the celery and its seeds possess a whopping 25 anti-inflammatory compounds. Similar to beets, celery is rich in fiber which supports a healthy digestive system and a compound called apiuman helps with stomach ulcers. Try celery stalks with peanut butter and raisins!

Parsley possesses one of the highest levels of apigenin, which is one of nature’s most powerful anti-cancer agents. This is a powerful anti-inflammatory and antioxidant that you want as a part of your regular diet. Parsley is also a nutritional powerhouse containing lots of vitamins and minerals. It is especially rich in vitamin C, which helps to neutralize free radicals and oxidative stress. Similar to basil, parsley contains eugenol, a volatile oil known to have anti-arthritic properties. Lastly, parsley’s essential oil helps to improve immune function.

Cucumber is obviously high in many important vitamins and minerals. It contains many beneficial anti-oxidants that can reduce the risk of a number of chronic diseases. Rich in water, cucumbers are excellent sources of hydration. Being high in water and low in calories, cucumbers help with managing your weight. Lastly, cucumber peel can help reverse diabetic symptoms, including decrease blood sugar.

Apple, of course, is very nutritious. Apples contain polyphenols, most concentrated on its peel, like epicatechin, which helps to lower blood pressure and risk for stroke. Eating an apple a day also lowers your risk of type-2 diabetes. With many antioxidants and anti-inflammatory substances, apples may have anti-cancer effects and promote bone density and strength. Lastly, compounds in apples help to reduce oxidative damage and preserve acetylcholine in the brain, helping to potentially preserve brain function as we age.

Carrots are high in water, energy, vitamins, and minerals. They are always a tasty addition to any juice recipe. Carrots contain many beneficial plant compounds, including (1) beta- and alpha-carotene, and lutein for eye health, (2) lycopene, which is an antioxidant that reduces the risk of cancer, (3) polyacetylenes that protect against cancer, and (4) anthocyanins, which are powerful antioxidants. Remember that diets rich in carotenes and plants with many colorful pigments have a protective effect against many types of cancers. Carrots are the only ingredient in my juice recipe that you could consume as non-organic without compromising nutrition or health benefits.
